Production and service

  • Variety: 100% Bianchera Istriana
  • Vinification: manual harvest in the early morning; less than one hour from vine to gentle pressing with no maceration. Spontaneous malolactic fermentation followed by inoculated fermentation using a "boiling tip" without cultivated yeasts
  • Maturation: aged for 36 months in stainless steel; bottled in August 2024 following the moon calendar
  • Alcohol: 12% vol
  • Soil: eocene flysch originating from sea sediments with layers of limestone
  • Cultivation: certified biological farming with integrated biodynamic operations
  • Serving Temp: 12–14 °C

  • Appearance: clear and natural, reflecting the non-fined and non-filtered character of the wine
  • Structure: defined by the limestone-rich flysch soil, offering a unique mineral backbone and natural stability
  • Experience: a patient, 36-month maturation process results in a refined, biological wine that respects the natural cycles of the moon
