  • Vinification: 14 days maceration in open vats; spontaneous fermentation; no sulfur, no filtration
  • Maturation: 6 months in used french barriques followed by 4 months in stainless steel on old lees
  • Alcohol: 13.0% (est)
  • Serving Temp: 12°C

Sensory profile
  • Appearance: naturally cloudy, vibrant yellow
  • Aroma: spontaneous and wild, with notes of orchard fruit and fresh yeast
  • Palate: textured and lively. The aging on last year’s lees provides a unique, creamy depth
