Production and service

  • Variety: 100% refošk (refosco), an indigenous variety of the region
  • Vinification: manual harvest in the third and fourth week of September. Maceration and spontaneous fermentation occur in open-top casks for 15 days with manual punchdowns every four hours. No cultivated yeasts or bacteria are added
  • Maturation: aged for 18 months in small and large neutral oak barrels (French and Slovenian), followed by 6 months in stainless steel. Self-fined in barrels, unfiltered, and bottled in November 2022 according to the moon calendar
  • Alcohol: 12.5% vol
  • Serving Temp: 18–20 °C

Sensory profile
  • Appearance: deep and natural, resulting from a self-fining process without filtration
  • Character: serious and powerful, yet vibrant and alive
  • Palate: a perfect balance of power and elegance, with a lively acidity derived from the poor soil and proximity to the sea
  • Historical Note: often referenced since Roman times for its health qualities, this "black grape" was a favorite of Empress Livia Drusilla, who lived to the age of 86
